Several people have asked about my reference to ‘cappo’, coconut bark and coconut McNuggets.

Cappo is short for cappuccino.

Coconut Bark is little hardened disks of coconut oil, unsweetened cocoa and Splenda. I melt it all together and put it in little candy tins. I keep them in the freezer and when I need energy or simply to add healthy fat to my diet, I pop one in my mouth. They are almost like a chocolate candy.

The Coconut McNugget is very similar except that I add nuts, seeds and unsweetened coconut flakes to the mixture. I have also added tahini, peanutbutter or cachew butter to the McNuggets.

3/4 cup coconut oil yields 1 TBSP per 12 candy tin spots.
